In 2004 we unlocked the door of a small kitchen at 3555 Fredericksburg Road and started the comal. The first night, our grandmother's salsa verde recipe — the one we'd carried from Tlaquepaque in a paper envelope — went on the table at 5:14 PM. By 9:00 PM we'd sold out of menudo.

The dining room has gotten louder since then. The bar grew a little roof. The papel picado now stretches three tables deep on a Saturday. And every Friday at nine, somebody we've known since they were small picks up the microphone and tries Vicente Fernández again.

“In Guadalajara, we say tapatío means someone from there. We brought there with us.”

We started the karaoke nights in 2019 because a regular dared us. It turned out to be the right call.
